Cranberry Nut Bread


2 cups cranberries
1/2 cup chopped nuts
2 cups all-purpose flour
1 cup sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
Juice and grated rind of one orange
2 tbsp butter, melted
1 egg, beaten

Cut cranberries in half or chop coarsely in food processor; combine with chopped nuts. Stir or sift together flour, sugar, baking powder, soda and salt. Combine orange juice, rind, melted butter and enough water (or additional juice) to make 3/4 cup of liquid. Add beaten egg and mix. Add liquid to dry ingredients and mix just enough to moisten. Fold in cranberry-nut mixture. Spoon or turn into greased and floured 9-by-5-by-3-inch loaf pan.

Bake at 350 degrees for 55 to 60 minutes or until loaf tests done. Cool thoroughly before slicing. Makes one loaf.

(Note: Recipe can be doubled and Cranberry Nut Bread can be frozen)
