Salt Alternatives Lentil Soup


1 and 1/2 - 2 cups dry brown lentils
1/4 cup Arame seaweed (optional; can be found in health food stores or some Asian food markets)
7 - 8 cups water

Boil lentils (and seaweed) for two minutes in uncovered dutch oven. Turn off heat and let sit covered for 45 minutes.

Meanwhile, prepare the following ingredients:
1 large onion, chopped
3 celery stalks, thinly sliced
9 medium-sized white mushrooms, chopped
1 and 1/2 cups carrots, chopped
3 bay leaves
pinch of thyme
1 - 2 tablespoons Bragg's Liquid Amino Acids (could be found in most health food stores) or low-sodium soy sauce
1/4 cup virgin olive oil
5 medium tomatoes
6 oz. no-salt added tomato paste
1 green pepper, cut into small pieces
1/2 teaspoon oregano
1/2 teaspoon basil
2 tablespoons natural raw sugar

Add to lentils and cook on low - medium flame for about 45 minutes or more, or until lentils are tender.
