Honey Butter Spread


1 cup sugar
1 cup heavy cream
1 cup honey
1 lb. butter, softened
1 tsp. vanilla

In a sauce pan combine, sugar, cream and honey. Heat on medium high heat stirring until it come to a boil. Mean while, put the butter in a blender or food processor, pour hot mixture over butter. Blend on medium speed until mixed well, turn off blender and stir if needed. Add vanilla, blend a until mixed well. Spoon butter into a plastic container, cover and let cool in refrigerator. Serve on hot bread or in hot oatmeal. Keep Honey Butter cool.
