Crockpot Zucchini


Zucchini is nutritious and this recipe makes it easy to make and extremely delicious.

2 lbs zucchini (unpeeled), sliced
2 vegetable bouillon cubes
1/4 teaspoon garlic powder
2 Tbsp dried onion flakes
2 teaspoon dried parsley flakes
1/4 teaspoon leaf oregano
1 cup V-8 juice

Mix all ingredients in slow cooker. Cover and cook on high setting for 3 to 4 hours. If thicker sauce is desired, remove cover during last hour.

Serves 6.
